It's been nearly a month since we posted last and literally it feels like we were just here last week. Every stranger keeps telling me "time flies" or "it'll go by so quick!" As if that's just something you say to moms when you see a little baby. But it's not only that they grow quickly, which they do, but because your time and attention gets so enraptured in this tiny person that it's really true what they say - the days seriously whiz past. The mortgage is due AGAIN? Didn't I just mow the lawn? How are we already out of groceries? I feel like I just had a baby last week but I suppose it's appropriate to jump back into real life now. Real life, but with a newborn. Which, of course, changes absolutely everything. 

I'm taking the blame for passing on this personality trait, but Curran is a particular little fellow. The boy knows what he likes and what he doesn't. He's really happy and flirty when he's well rested and has a full belly but he makes it quite clear when his environment is less than ideal. He prefers to be held at all times, has gas volume that rivals that of a grown adult, a natural mohawk inside his infant bald spots and a smile that makes the exhaustion and baby-mind-reading (or lack there of) a barely noticeable speed bump. I just stare at his sweet face and smile back over the complete joy that my son recognizes me. He knows me! Who'd have thought something so simple would make me so happy. I will gracefully admit this season has taken some getting used to. I'm tired and I lose my patience beneath his crying sometimes and I miss when I could just come and go when I wanted, but life feels so much more full with him here. We're living this life of relationship and experience and he is the character in our story that had been missing and it feels so right to have him here. 

Meals have been pretty simple lately and I suppose it'll be that way for awhile, but I'm making big bowls of sturdy green or grain salads that we can keep in the fridge and grab when we only have one free hand to eat with. This is my recent favorite so I made it again for you. Hugh added bacon to his, so there 's that, but I think you could add in a variety of different proteins if you prefer. I'm including a picture of our baby Bug, down at the bottom, because he's just the cutest thing and I wanted to show you :)

I try to chop everything small so it's easy to wrap up. They turn out to be a little messy but they taste great. The wrap makes it more filling and portable but the salad can stand alone as a meal as well. I wrapped up a few extras in parchment to keep in the fridge. Note the tortillas will give under the moisture of the slaw so if you're planning on eating it any further than a day away, keep the slaw and tortilla separate until ready to eat. 

  • 1 Tbsp. muscavado or brown sugar
  • pinch of cayenne
  • 2/3 cup pepitas (pumpkin seeds)
  • 1 small bunch kale, stemmed and shredded
  • 2 large carrots, grated
  • 1 cup baby tomatoes, halved or quartered
  • 2 green onions, sliced thin
  • 1 small english cucumber, diced (about 1 cup)
  • 1 small bunch cilantro, roughly chopped
  • 1 cup cooked lentils, black or green preferably
  • 1 large avocado, diced
  • 3/4 cup crumbled feta cheese
  • juice of two limes
  • 1/4 cup extra virgin olive oil
  • 1 Tbsp. hot sauce
  • sprinkle of salt and pepper
  • 1/4 cup sour cream or non dairy sour cream
  • 4 brown rice or flour tortillas for wrapping

In a small, nonstick skillet over medium low heat, warm the muscavado or brown sugar with a pinch of cayenne and salt. Add the pepitas and stir so the sugar sticks to the nuts and they smell toasty - about 5 minutes. Remove to cool on a piece of parchment (or left in the pan is fine). 

In a large mixing bowl, combine the kale, carrots, tomatoes, green onions, cucumber, cilantro, lentils, avocado and feta. Add the juice of both limes, olive oil, hot sauce, a sprinkle of salt and pepper and the cooled pepitas and toss everything together to mix. 

Warm the tortillas over the stove. Add a spoonful of sour cream down the center of the tortilla, add a pile of the kale slaw and wrap 'er up. Wrap everything in parchment to keep it together for portability or to make in advance and keep in the fridge.

This is the peanut sauce that was intended to be easy, quick, every day sauce and then things just kept getting thrown into the blender. Lots of finger dipping, tasting...more ginger! dip. add coconut! dip. more spice! What I have below is a general recipe, but you'll need to taste and adjust as you wish. I may have lost track of a half teaspoon here or there. We didn't want it so peanuty that it resembled more of a spread for toast than an asian sauce, so the coconut milk and bit of toasted sesame oil help rein that in (see note). We like lots of ginger, always citrus, just enough spice to warm your throat and poof, a great sauce that will be used for a number or quick dishes this weekend. The photo here shows it on a simple asian sandwich with seared tofu, cucumber, carrots and scallions but I also plan on using it as a dressing for a quinoa and kale salad or making some spring rolls packed with veggies with this on the side for dipping. However you wish, meals seem to come together quite quickly with a good sauce on hand.


PANTRY PEANUT SAUCE // Makes about 1.5 cups

I imagine this would last a good two weeks in the fridge without comprimising too much on flavor. Don't quote me, I don't see it lasting long enough to tell, but it's an educated guess.

  • 1 cup creamy, unsalted peanut butter
  • 2 cloves garlic
  • 3 Tbsp. fresh grated ginger
  • zest and juice of one large lime
  • 1/2 tsp. red pepper flakes
  • 2 Tbsp. honey
  • 3 Tbsp. soy sauce or tamari
  • 2 tsp. rice vinegar
  • 2 tsp. toasted sesame oil
  • 2-4 Tbsp. light coconut milk or water, as needed*
  • 1/4 cup chopped cilantro, optional

Add all of the ingredients besides cilantro to a powerful blender or food processor and run until smooth. Taste and adjust as preferred. Add the cilantro, give it another few pulses and keep in an airtight jar in the fridge.

* I used coconut milk for thinning because I had some open. It also helped cut the peanut butter flavor and made it a bit more savory. Water will work fine to thin, just expect the peanut flavor to be more forward. It will firm up a bit in the fridge, so keep that in mind while choosing your consistency.

I am not sure there is a group of people more partial to fall, than the food blogger demographic. I have read countless posts and tweets about the elation brought to most via soups, squashes and pumpkin baked goods. Autumn is like the big hug we all get before the pale skin, freezing toes and overdose of holiday jingles. I do like me some good fall foods, but they seem to require a bit more time, ingredients, number of pots to clean and what forth. The pay off, is the complexity of layered flavors, the tenderness of braising and roasting and aromas that linger for hours. The art of delayed gratification. It's supposed to be 80' here this weekend, so the chilled leftovers of this dish are going to be heaped on a nice plate of spicy greens. I've got my arms out and ready for that hug autumn, where are you?

Note that yams and sweet potatoes are not the same thing, but either could work here. Yams are slightly less starchy, but in this recipe, the taste is not compromised. Be creative with the spices, if you like it spicy add a bit of red pepper, a squeeze of lime at the end if you enjoy citrus or more ginger if you like the zing.



I suggest serving this side, on a wide or long platter, not a bowl. When all the warm potatoes sit on top of each other, they continue to steam and get mushy.

1 Cup Dried Chickpeas/Garbanzos ,soaked in water overnight

3 Large Sweet Potatoes, peeled (about 3 lbs)

¾ Cup Finely Chopped Yellow Onion

2 tbsp. Melted Butter

1 tbsp. Olive Oil

1 tsp. Cinnamon

2 tbsp. Honey

2 tsp. Fresh Nutmeg

1 tbsp. Fresh Grated Ginger

1 Garlic Clove, minced

1 tsp. Salt

1 Lime Zest and Juice

Fresh Ground Pepper

3 tbsp. Fresh Thyme, leaves removed


Oven to 425’

1. In a medium pot, bring 3 cups of water to a boil, add the soaked beans. Gently boil for about 50 minutes until the beans are cooked through. Drain.

2. In the meantime, prepare the peeled potatoes. Cut off the ends and chop them into one inch cubes. Try to make them equal in size, shapes can vary. Put them in a large bowl.

3. In a small bowl, whisk the lime zest and juice, melted butter, oil, garlic, salt, honey, cinnamon, and nutmeg together. Pour the mix over the big bowl of potatoes, stir. Add the drained garbanzos, onions, 2 tbsp. of the fresh thyme and gently fold to cover everything in the spice mixture.

4. Spread the goods evenly onto a rimmed baking sheet. Bake at 425’ in the upper third of the oven for 35-40 minutes, gently stirring halfway through for consistent browning.

5. Let cool a bit before serving, sprinkle fresh pepper, squeeze of lime,taste for salt and sprinkle remaining thyme on top.
