I don't typically click over to articles that people post on Facebook, Twitter etc. but every now and then a title catches my eye. It was a piece in New York Magazine recently called The Day I Started Lying to Ruth - written by a cancer doctor husband who lost his wife to cancer. We know a few close people struggling with the disease themselves and when I read things like this, I'm both sad and shocked that there are countless people fighting this fight. It may not be mine personally, but it is always someone's mother or child or parent and it's gut wrenching. The article was thoughtfully written, he draws you into his story. There is a line in the beginning that made me think, and not even about cancer or illness like the article leads. "It was a warm night for early June, the beginning of the winter in Argentina. People crowded the sidewalks, returning from work, stopping for dinner. All the everyday stuff that fills our lives, neither adding particular meaning or taking it away." And I thought about what most of my days are composed of - it isn't really a routine, but something similar to one. Not everyday can be filled with moments like dream travel, getting married, job promotions, the birth of a child, or achieving some huge goal and the like... but is everything between not adding or taking away meaning? I know he was speaking in general terms, but it just made me think of the in-between and how I actually truly value that time when I give it due credit. Hugh and I stayed up late hanging some things in the baby room last night  (I am a recent fan of these wall appliques, I'll post a picture on IG when the room is slightly more finished). I'd consider it an "in-between" evening, nothing particularly special happening, but I will remember us trying so hard to make a special room for the wee ones arrival. Hugh was using a level to place the stickers and my non-crafty self was making a mobile out of a lucky dream catcher I was gifted. The in-between of the big stuff is still good stuff, you just have to pay closer attention, make note of it. In reading the article, his story was marked by all sorts of "normal" moments, the details that make the whole piece interesting really. I don't want to forget that next time I feel in a rut. The in-between has it's own subtle remark.

I have a little extra time this week and wanted to put together some freezer meals for when the babe is here and I don't have time nor want to cook. I ripped out this recipe for a quinoa burger out of the local paper and figured it'd be worth a shot. I'm aware veggie burger recipes are not hard to come by, which is why I think they interest me, like a chocolate chip cookie, always being changed just a little bit to be different or better. I threw this one on a bun with avocado and cheese and a generous slather of mustard. Ask me in a few weeks and it will likely be back on a big mound of salad with an egg on top while I am trying to get back into my pre-baby clothes. Either way, a general veggie burger recipe is always nice to have on hand.

VEGETABLE QUINOA BURGERS // Makes 6

Adapted from The Los Angeles Times from Cafe Pasqual, New Mexico

These are not veggie burgers to be grilled - they are delicate and moist and could not handle a flip on grates. I make a note at the end of the recipe, but they are best pan seared or baked. They would be adorable small and on mini sliders. 

Nutritional yeast can be found at health food stores or online. It is a vegan alternative to a somewhat cheesy flavor. It offers depth of flavor here, but you could certainly make these without it. These are a very basically seasoned burger which I like - add flavor in sauces, spread, slaw, cheese etc. as you wish. 

  • 3/4 cup quinoa
  • 1 1/3 cups broth or water
  • 1 small zucchini
  • 2 large portobello mushrooms, stems removed and finely chopped
  • 1/4 cup olive oil
  • 1 large shallot or 1/2 a yellow onion, minced
  • 2 tsp. dried oregano
  • 1/2 tsp. cayenne
  • 2 tsp. soy sauce, tamari or Braggs aminos
  • 1 Tbsp. nutritional yeast
  • 1 cup coarse ground oats or breadcrumbs
  • 3 Tbsp. flaxmeal
  • 2/3 cup mashed cooked sweet potato
  • sea salt and pepper

Rinse the quinoa in a mesh strainer. Bring the quinoa and broth or water to a boil in a pot. Turn it to a gentle simmer and cover and cook until liquid is absorbed and the quinoa is cooked, about 13 minutes. Stir, leave the lid ajar and set aside to cool. 

While the quinoa cooks, grate the zucchini. Spread it on a kitchen towel and ring out the extra moisture. 

In a large sauté pan, warm the olive oil over medium heat. Add the shallot or onion and sauté for 3 minutes until softened. Add the mushrooms, zucchini, generous pinches of salt and pepper and sauté another 5 minutes until cooked down and much of the liquid has been cooked out. Stir in the oregano, cayenne and soy sauce and turn the heat off to cool. 

Transfer the quinoa to a bowl, add the nutritional yeast, oats or breadcrumbs and flaxmeal. Once the vegetables are cool, add them to the bowl as well and stir everything to mix. Mash in the cooked sweet potato and another pinch of salt and pepper and stir everything to mix. If it looks super dry, add another drizzle of oil or more mashed yam, but if it is *too* wet, they won't stay together. I know we are making veggie burgers, but you want it to be the same sort of thickness or texture or ground beef or turkey, not wet. 

Heat a layer of oil in a large skillet (I find non-stick works best for delicate things like this). Make patties about 1 1/2'' thick, and cook until golden brown on each side, about 4 minutes per side. Alternatively, you may form your patties, place them on a parchment lined baking sheet, drizzle a little oil on top and bake them at 375' for 20 minutes. Put your cheese on one side after you flip the patty. Prepare your buns with mashed avocado, spread, greens or whatever you wish and serve warm. 

* I overdid it on the yam and mine were very soft throughout. I find that when I do this with veggie burgers, baking helps dry them out better so they stay together better between a bun. If you're eating it plain and you want a crispy crust, pan works great, for something in a sandwich, I prefer to bake them for a sturdier result. You're preference on texture.

I remember when I first got your email. It was the week after some negative comments had gotten the best of me, I mentioned it here and you'd written just to say hi. You appreciated my work; the food, yes, but also the way I wrote. I don't consider myself a "writer." I like writing, I can write letters, and I err on the side of vulnerability... you could classify me as a journaler, perhaps. Anyway, I keep coming back to your email because you remind me that I want to be relatable here. Even when vulnerability feels risky.

"I found your blog a year or two ago, and bookmarked it just for salad inspiration. But recently I've realized that your blog has become to me inspiration not just for salads and "bowl foods" and good food in general, but for good LIVING too. In the past 3 months, I've graduated college, gotten married, started a 9-to-5, and moved to a depressed inner-city. Our car has gotten broken into, we've started paying bills, we've learned that good communication in marriage is a full-time job, and, and, and, -- you know: real life happened. The better and the worse."

That's a lot to soak up in 3 months, lady. It wasn't the fluffy pep-you-up type of email, but the real-life-happened part of it that reminded me that we're all in a mess of things. I stop writing in fear of judgement but those aren't the people I'm writing to. We went to the beach late in the afternoon last weekend in search of a bit of perspective. I had let the prospect of a house purchase swallow me up and I needed out of my own head. I had gotten home from work in time for a late afternoon in the sun, and after a weeks-long-swell-drought there were finally some waves, so Hugh was eager to get in the water. He had been working at home all day and needed time in the waves with his buddies. I had been with people all day, so I needed to sit by myself and stare out into the ocean whose endlessness always puts things in perspective. The house was a massive decision, but not the most important we will ever make. And while it certainly comes into play, it is not the single point at which our future happiness and success will teeter upon. It is a house. Sitting there at the edge of the Pacific, so much that I had not thought about all week while I'd been wrestling with the "right decision" filled my heart.

My aunt who continues to fight cancer for the fourth time, sick and discouraged.

Friends with babies in their bellies and friends who desperately want babies in their bellies.

Health. Marriages. Lonliness. Divorce. Loss. All of it right in front of me or just a degree away.

I've re-read your email a dozen times now, Caroline. I keep the entirity of it in my personal email folder to remind me why I love this space and the awesome people I'd have never met if not for this website. Thank you for reminding me that there are people on the other side of this blog - some of whom are here for recipes or maybe the pretty photos, but most that are simply other people doing their best to craft a beautiful, meaningful life. 

I hope more better than worse for you, lovely.

MUSHROOM BURGERS WITH ASIAN SLAW // Serves 4

For the slaw, I have this julienne peeler and think the quality is excellent. It is easiest to use when the vegetables are fresh and cold, the firmer the better for peeling purposes. A regular vegetable peeler works fine as well, your shreds will just be thicker. A great thing about marinating vegetables or tofu is that unlike meat, you can put them back into the marinade after cooking to soak up a bit more of the flavors. That said, chicken or fish, salmon maybe, could work here too if you're making food for a more omnivorous crowd.  

  • 4 large portobello mushrooms
  • 2 Tbsp. low sodium soy sauce/tamari
  • 2 Tbsp. maple 
  • 1 Tbsp. toasted sesame oil/ extra virgin olive oil
  • squeeze of lemon or lime
  • pinch of pepper
  • 2 carrots
  • 1 small english cucumber
  • 1/2 small red onion, thinly sliced
  • 2 Tbsp. tahini
  • 1 tsp. low sodium soy sauce/tamari
  • 2 tsp. toasted sesame oil
  • 2 Tbsp. rice vinegar
  • 2 Tbsp. fresh mint, roughly chopped
  • 1 small bunch cilantro, roughly chopped
  • 2 avocado
  • sriracha mayo*
  • 4 buns

Wipe the mushrooms clean and remove the tough stem. Preheat a grill or grill pan to medium heat. In a shallow pan, mix together the soy sauce/tamari, maple, oil, splash of citrus and pepper. Add the mushrooms and rub the marinade into all of the surfaces. Let them sit for 5-10 minutes to soak it up. 

Using a julienne peeler or vegetable peeler, shave the carrots and cucumber into thin or thick shreds respectively. Put them in a large mixing bowl with the red onion. Make a quick dressing by whisking together the tahini, soy sauce/tamari, sesame oil and vinegar. Pour it over the vegetables and toss to coat. Add the chopped mint and cilantro and give it all one more toss. 

Grill the mushrooms for 5 minutes on each side or until they are soft throughout. Grill or warm the buns.

To assemble the burger, smash half of an avocado on the bottom of the bun, top with the grilled mushroom and a big scoop of the asian slaw. Spread a bit of sriracha mayo on the top side bun and enjoy. 

* For the sriracha mayo, I use 1 part homemade sriracha to 2 parts veganaise or mayonaise. Stir and spread. The bottled stuff works just fine but try the homemade stuff at some point, it's a treat and has no preservatives.

MUSHROOM, MILLET + LEEK FRITTATAS

It can be tested and approved that a solid majority of our friends are either getting married or having a baby this year. I remember thinking last year that 2013 was going to be quiet on the celebratory front, but it has proven otherwise. Once we get back from our trip in April, every weekend seems to be booked with an event. Which reminds me, I need to keep my eyes peeled for dresses. It is impossible to find a dress when you really need one. It's true. In all the talk of showers, my brain starts piecing menus together. I made frittatas for a brunch shower last month. They are so perfect for feeding a group. They're inexpensive, easy to make, go well with baked goods, maybe a simple salad, fruit and mimosas. Am I selling you my shower menu? Something tells me you are familiar with the goodness that is eggs.

After yet another handful of trail mix yesterday, I huffed that I was bored of my routine foods. I go in phases, tending to burn out on something I really loved at one point. It's nice to have something at the ready for snacks or a quick meal to-go when needed. I find the lentil meatballs are good for this. I don't think I have used millet here yet, but now is as good a time as any to bring it in. It is part of one of my favorite salads from the cookbook. It is gluten free, seeing as it is actually a seed, has protein, B vitamins, fiber and is highly alkaline. You can use it anywhere you would use rice or quinoa as it takes on any flavor you'd like, much like those two will.I cook millet with a simple 2:1 ratio. It cooks quickly by bringing the rinsed grain and liquid to a boil, turn down to a simmer, cover and cook until the liquid is absorbed. Fluff, cover again and let it absorb the steam for optimum puffy texture. All said and done, the millet takes around 15 minutes. So glad to have these ready for early work days or pre-morning workout when I am easily persuaded to stay home and cook breakfast instead... which will very likely still happen.

I add a bit of grain (seed) here to make them a more filling grab-n-go breakfast or snack. You could use quinoa or even rice as a substitute.

I am a big fan of sheeps feta, the conventional stuff is usually made of cows milk and doesn't hold a candle to the real thing. Yes it's a bit more expensive but a little goes a long way. Trader Joes has an excellent one from Israel in a green/yellow package.

Lastly, I'm not sure I would suggest using muffin liners, but let me know if you try. I find that with items this wet, you loose half the food getting stuck to the paper.

  • 9 eggs
  • 2/3 cup cooked and cooled millet
  • 1/4 cup cream or milk (coconut milk would work too)
  • 1 tsp. sea salt, divided
  • 1 tsp. fresh ground pepper
  • 1/2 tsp. red pepper flakes
  • 8 oz. mushrooms, stems removed, roughly chopped
  • 1 T. extra virgin olive oil, divided
  • 2 leeks, cleaned, halved and thinly sliced
  • 3 Tbsp. chopped chives, parlsey, thyme or mix of these (plus more for topping)
  • 8 oz. sheeps feta

Preheat the oven to 350'. Grease a standard muffin tin.

In a large mixing bowl, whisk together the eggs, cream, 1/2 tsp. salt, pepper and red pepper flakes until well blended. Set aside.

In a pan, preferably non stick, over medium heat, add the mushrooms and a pinch of salt. Yes, dry pan. You saute them around until they sweat off their excess water. They will release water, dry back up and THEN add 1 tsp. oil and saute another minute. Remove and set aside. Heat another tsp. olive oil in the same pan, saute the leeks with another pinch of salt for 8-10 minutes until just browned. Add the leeks to the bowl of mushrooms, add the herbs and cooked millet and stir to combine. Once the veggie mix is relatively cool, add it to the egg mixture.

Fill the muffin tins a generous 3/4 of the way full, the mixture should last you all dozen tins depending on the size of your eggs. Top each with some crumbled feta and bake on the middle rack for 18-20 minutes. The center should be slightly underdone and will finish cooking as they rest. Garnish with any remaining chopped herbs. Allow them to cool for at least ten minutes before gently twisting them from the tins. Serve with your favorite hot sauce.
